FOOD...

A few recipes to share that are a hit at our house, maybe they will be a hit at yours...

1 - SLOW COOKER THAI CHICKEN THIGHS

8 small boneless chicken thighs
1/4 cup peanut butter
1/4 cup asian sesame dressing/marinade
1/4 cup chicken broth
1 Tbsp minced ginger
1 Tbsp soya sauce

Long grain brown rice, I cook enough for four of us.

Place chicken in slow cooker.  Mix the next 5 ingredients until well blended, pour over chicken and cover.  Cook on LOW for 6-8 hrs or HIGH for 3-4 hrs.

Garnish with crushed peanuts and cilantro. I have also steamed broccoli to serve with it or you could also add peas to the rice as an alternative to the broccoli.

2 - BBQ SLOW COOKER CHICKEN

 4 chicken breasts, boneless and skinless
 2 1/2 cups bbq sauce
 1/4 cup vinegar
 1/4 cup brown sugar
 couple shakes of soy sauce and if you like it hot, 1 tsp hot sauce
 1 tsp garlic powder.

Once again place chicken in slow cooker, mix all other ingredients together and poor over top and cover.  Cook on LOW for 6-8 and HIGH for 3-4.

I cooked the rice with this recipe a little different, I added about 1/2 pkg of taco seasoning to the water and cooked the rice in that to give it a mexican taste as well as added some diced peppers for some veggies!

I had to share these amazing shots that a friend of Randy & Marilyn's took while they were all in Hawaii a few weeks ago... these whales were only 12-15 feet from the boat they were on - AMAZING!!!

SKATING...

 
 

Declan started his skating lessons today!  First day and up by himself and no tears... YIPPEE !!!  His teacher is lovely and so great with the kids.  So happy to see him enjoying it :)
